Recipe for Plum Sorbet, with thanks to the chefs of the George and Dragon Inn, Clifton, Penrith.
1 x kilo of plums
200g caster sugar
Squeeze of lemon
- Half and stone the plums.
- Put plums in a pan with the sugar and lemon.
- Heat on a medium heat for approximately half an hour until they start to break down and go soft.
- Pass through a fine sieve pushing through with the back of a ladle.
- Put in ice cream machine and churn for 20-25 minutes.
