Recipe for Plum Sorbet, with thanks to the chefs of the George and Dragon Inn, Clifton, Penrith.

Ingredients

1 x kilo of plums
200g caster sugar
Squeeze of lemon

Method

  1. Half and stone the plums.
  2. Put plums in a pan with the sugar and lemon.
  3. Heat on a medium heat for approximately half an hour until they start to break down and go soft.
  4. Pass through a fine sieve pushing through with the back of a ladle.
  5. Put in ice cream machine and churn for 20-25 minutes.
