UXUA Casa Hotel is located in the unspoilt fishing village of Trancoso on a wild stretch of coastline in Bahia, where pristine beaches backed by Atlantic rainforest stretch endlessly. UXUA’s kitchen has a strong regional focus inspired by the rich culinary heritage of the Pataxó Indians and Afro-Bahian community, as well as the more recent influence of the travelling hippies who introduced Indian spices. Produce is sourced from UXUA’s gardens, local organic farms and fish still caught using traditional techniques by the locals. Cooking in Bahia is a social event which is why UXUA has an open kitchen with a counter and bar stools so that guests can sit and chat to the chefs whilst they are preparing dishes.
During September the hotel is offering the opportunity for visitors to take part in a number of food-related activities including visits to coffee or cacao plantations, fishing with local fisherman, visits to markets, traditional cookery demonstrations with local families and caipirhina master classes.
For four days (12 – 16 September) the UXUA Hotel is holding its own Food Festival with events including a typical Brazilian churrasco (barbecue); a chocolate-making master class using fresh cacao from UXUA’s gardenfollowed by a lesson in how to prepare moqueca fish stew, the iconic dish of Bahia; visit Praia do Espelho (Espelho Beach – 45 mins drive from UXUA) and enjoy freshseafood at Silvinha, a rustic beach hut with wood-burning stove and open-sided dining loggia and a Sunday feijoada (traditional bean and pork stew), a meal meant to be enjoyed in the company of friends.
