The Royal Scotsman

The Royal Scotsman, the UK’s only luxury sleeper train, offers rail voyages through the heart of the Scottish Highlands. Accommodating just 36 guests, the atmosphere, service and cuisine on board The Royal Scotsman is akin to a country-house, with the added luxury of dramatic landscapes passing by.

Scottish born Executive Chef Mark Tamburrini and two Scottish Sous Chefs work in a constantly moving kitchen just six by two metres. The chefs are not only limited by the amount of equipment they can have on board, but also by power usage so as not to overload the train’s generators!
However, one advantage that The Royal Scotsman has over other restaurants is the constantly changing fresh larder on its doorstep offering a varied selection of local ingredients as it wends its way through the Scottish countryside.

Smoked fish from Inverawe Smokehouse; scallops and langoustines from the Kyle of Lochalsh; local Aberdeen Angus beef and micro salad, baby vegetables and potatoes from the Isle of Arran produced using a seaweed fertilizer thus avoiding the use of harsh pesticides. Even the chocolates are local – they are from Iain Burnett who has become known as the Highland Chocolatier.
